All You Can Eat Giant Estuary Grouper @ Makan Kitchen, DoubleTree by Hilton KL


From November 4 till December 30, 2016, the Giant Estuary Grouper (Goliath of the sea) also known as 'long dan' in Cantonese is now available as part of the buffet spread at Makan Kitchen, the signature restaurant of DoubleTree by Hilton Kuala Lumpur.





The monstrous fish (average weight of 23kg to 25kg) will be transformed into six distinctively mouth-watering Malaysian dishes.

Fish Bone Soup with Giant Estuary Grouper Carpaccio
The fish bone boiled with peppercorns and ginger for 4 hours at a consistent temperature resulting in a smooth, full-bodied and velvety soup texture.

Giant Estuary Grouper Congee with Dried Oyster
A simple dish that step up its game by infusing its flavour into each grain of rice for a flavourful and creamy congee combined with dried oyster.

Giant Estuary Grouper in "Asam Pedas" Kawah Style
Spicy and tangy, the skin turns wonderfully gelatinous when stewed. A real premium collagen treats! Highly recommended.

Stir Fried Giant Estuary Grouper with Ginger and Scallions
Crunch into the crisp and succulent grouper with its delicious thick gelatinous skin.

Steamed Giant Estuary Grouper with Blended Soy Sauce
Simple cooking style to bring out the sweetness of the grouper, firm yet bouncy. Highly recommended!

Fish Head Curry (Mamak Style)

According to the Executive Chef, Eric Siew, the fishes were brought in its freshest form as it is harvested on the same day it is served. With very minimal portions gone to waste, the culinary team truly appreciates the Giant Grouper, not just only for its size, but more on the "nose-to-tail" dining philosophy that every part can be used to create a different, yet exquisite dish.

To top off the gastronomic dining experience, diners could also enjoy an array of 80 dishes from Chinese, Indian and Malay sections, to the more authentic Peranakan, Kristang and Iban delights such as Tandoori Chicken, Double Boiled Soup, Signature Roasted Duck and special meat carving.
