A couple of weeks ago, we had the opportunity to make this amazing LENNOX collagen infused Berry Souffle Cheese under the guidance of the instructor from the ABC Cooking Studio.

So it was my first time making soufflé and I nailed it. Here's the recipe if you want to make it!

Berry Soufflé Cheese

Ingredients 

Soufflé Cheesecake
150g cream cheese 
40g caster sugar 
2 egg yolks
30cc milk
1 tsp vanilla essence
1 tsp lemon juice
20g cake flour
1 tbsp LENNOX collagen

2 egg white
30g caster sugar

Berry Cheese Cream
30g cream cheese
15g caster sugar
1 tbsp strawberry powder
1 tsp lemon juice
80g whipping cream
1 tbsp LENNOX collagen

Topping
40g raspberry jam
1 tsp lemon juice
8 pcs fresh raspberry
16 pcs fresh blueberries
10g minced pistachio

Soufflé Cheesecake

1. Bring cream cheese to room temperature 10 minutes before using. 
2. Mix milk and vanilla essence together and heat in a microwave.
3. Preheat the oven to 150°C.
4. Place cream cheese in a bowl and whisk until creamy with a hand mixer. Add sugar and mix well.
5. Pour in egg yolk in two additions and mix well each time.
6. Add in the premixed milk and vanilla essence, mix well each time. Add lemon juice and mix well.
7. Sift in cake flour and LENNOX collagen. Mix with hand mixer at speed 1 gently for 1 minute.
8. In another bowl, mix the thick part and watery part of egg white with hand mixer. Then, whisk until egg white clings to the blades of the hand mixer before adding half of the sugar. Whisk until soft peaks form. 
9. Add the remaining sugar and whisk till stiff peaks form.
10. Add (7) to (9) in two additions, fold well each time. Then, pour batter into the mould, place onto tray and bake. Do not scrap the batter at the sides of the bowl to prevent the cake from sinking.
11. Check to ensure it is well-baked and remove from oven to cool.

Berry Cheese Cream

1. Place cream cheese in a bowl and whisk until creamy with a hand mixer. Add sugar and mix well.
2. Add strawberry powder and LENNOX collagen into the mixture. Add lemon juice and mix well.
3. Add whipping cream in two to three additions. Mix well each time. Transfer into a piping bag once it is 80% stiff. Keep it chilled in the chiller before use.

Finishing

1. Mix raspberry jam and lemon juice well with a spoon in a small cup. 
2. Add raspberries and blueberries. Mix well.
3. Cut the tip of the piping bag with berry cheese cream and pipe on top of the souffle cake. 
4. Top with (2) and garnish with pistachio.
